You can edit and update sticky notes as you need, including editing their appearance, size, and content. When you want to get rid of a sticky note, you can delete it, or you can save the content as a .txt file.
Sticky notes, those little slips of yellow paper with adhesive you leave all around your house as reminders, are old technology. Making sticky notes an early, built-in application of Mac computers, Apple found a way to bring these notes to the modern era, by featuring them as a great way to add reminders to your desktop.
You can customize and resize sticky notes quickly and easily too.
Open "Finder" from your dock or the top menu bar on your Mac. Click on "Applications" in the menu on the left hand side.
Scroll down and click on "Stickies" (your applications should be in alphabetical order).
If it's your first time using Stickies on your device, two Sticky notes explaining how the app works will open. Click on the words on the note and start typing.
You can format it like a normal note, with a title line and content below that, or however you choose to.
To increase or decrease the note size, grab the lower left or right corner and drag in or out to the desired size.
It will still stay this size on your desktop. If you want to remove the note from your desktop, click on the small white square in the upper-left corner of the note.
A pop-up window will open asking if you'd like to continue with deleting the note or save it as a text document.
Click "Delete Note" to delete it, "Save…" to save it somewhere on your computer, or "Cancel" if you've changed your mind.
To format your note, highlight the words you want to format and right click. You can also click on a word while holding the "control" key on your keyboard to open the formatting options.
From the pop-up menu select "Font" to change the font type, weight, and color.
You can also select "Transformations" under the "Edit" tab to make all text upper-case or lower-case, or choose from various other formatting options.
To change the color of the note itself to one of six colors, use the "Color" tab from the top menu.

Post-it is the best sticky notes app to have on the MacOS.
The developers have done a great job creating this minimal yet practical application using the new Catalyst tool, which has allowed the application to make a bold appereance on its debut in the App Store.However, my only concern is the fact that the user cannot interact with the post-it notes on the desktop, the way its done with Apple's 'Stickies'.

I personally would love to be able to use and view these sticky notes on the desktop, with the option of writing and resizing them directly from the home screen.
Consequently, I find myself using stickies more to group my ideas although I have been wanting to switch to another sticky notes app, as I feel that Apple's Stickies is quite outdated.
I hope the developers would take this suggestion into consideration.

I like the simplicity and boldness. But for the Mac version I wish there was more I can control/customize.
For example when in the board view, I can't right-click notes and manipulate them that way, Just to delete a note (and get that satisfying crumble up animation)I have to open each individual note --> Click the delete button --> "are you sure you want to delete"--> Yes.
That's like a 3 step process that can be so much easier. I don't need to be asked if I'm sure I want to delete, if I accidentally delete a note, I'd rather just have an undo option (or a trash bin).
Also Apple Watch support would be the Perfect platform for this!! Post-it's on my watch for a shopping list!?!

How to edit sticky notes on a Mac
iCloud support is nice but I would still like to see a designated Post It Account for users that cross to diferrent OS'. Another thing thats lacking is the ability to pin your notes to your main desktop screen. This will also be a great thing to do with the release of iOS 14.

Regarding your comment on pinning notes. Have you tried favoriting notes so they are displayed in the widget from the home screen of your device?
